Menu Planning

October. My favorite month. Sweet. And shout out to my friend's awesome jewelry over at Electric Sun Creatives.
 
It also turns out, when you become an adult, that it may be the craziest month of the year for some reason. Loren is back in school, and I can feel it. Feel it in my bones.That's why my posts have been scattered. I'm trying to become the cook in our family of two. Putting in an effort to show my love. Geeze. I'm usually just the baker.

 Mondays are my day 'off', but have actually become my menu planning day. I'm getting pretty dang good, if I do say so myself. I have also been given some crock-pot menus from my friend Anna to post soon. Keep your eyes peeled! I have been making one crock-pot meal a week to freeze, so I can pop it in before a night at work. So far, the flow has been going pretty well.

Here was the menu from this week.

Monday: Date Night, not a total cooking day, I admit.
Tuesday: Ham, Pinapple, and Cheese Turnover with Salad
Wednesday: Crock-pot Chicken pot pie with biscuits as the 'pastry' (pictured above) from here c/o Real Simple Magazine. Freezing directions below.
Thursday: Crock-pot Chicken curry (lots of veggies)
Friday: Veggie Tacos and beans
Saturday: Pasta


Chicken Pot Pie freezing directions.

I cut up all the veggies(minus green beans and peas), chicken, and added the spices/flour in a big bowl. Mixed it up. Placed in two freezer bags, and bam. That's it.  This is enough for two, and maybe one or two leftover portions. For the beans and peas, add them about 1 hour before you are ready to eat, and turn the crock pot on high. The chicken was a little tough, but it was fine for a busy day.

I would LOVE LOVE LOVE to hear your recipes and crock pot ideas. I'm on a hunt. They might be what keep us a float this last year of grad school. (Thank God)

  1. That looks really yummy! I've done a couple crock pot recipes that I've found on pinterest (jambalaya and dr. pepper brisket). Maybe you can find some there!

    1. It is getting easier... I think. I'm down to planning and making a grocery list in about 45 minutes. Ekk, still seems like a lot!

    Second, WOW. way to be organized and AMAZING.
    I have to admit that I haven't used our crock-pot too much, but reading this now is inspiring me to do so!
