Domestic Adventures: Fried Okra


Last week I decided to pursue my okra recipes a little further. I tried an oven baked recipe the week before last that did not cut it. It was missing something. Now I have figured out the missing step, and will try this recipe baked next time. 

Here it goes.

3 c sliced okra
2 eggs
2 c corn meal
salt to taste
pepper to taste
1 c veggie oil

1. Clean and slice your okra into 1/4 inch bits. Go ahead and get out two mixing bowls. In one, beat the two eggs. Throw your sliced okra in, mix it up, and let it sit for 10 minutes.

2. Enter bowl #2. Mix together corn meal, salt, and pepper.

3. After 10 minutes, toss the egged okra in the cornmeal mix. Make sure the bits are covered well. After this step, I would suggest tossing the okra in a mesh colander to remove excess cornmeal mix. While doing this step, go ahead and heat your oil in a skillet on medium high. It's read when a drop of water sizzles. 

4. Time to cook it! Put the okra in the pan, stir gently until it is golden brown.  Place it on a paper towel to get rid of any excess oils.

    1. It's a pretty yummy recipe for sure!... but I need to find a better way to cook my veggies without frying :)

  2. My Granny would always fry us okra whenever we stayed the night at her house. I've tried to make it before and for the life of me I could never get mine to taste right. I'll be trying out this recipe very soon..thanx for posting!

    1. haha! it's so recently developed for me, too. My husband has 'made' me try a lot of things that I didn't really eat growing up, and I would say I'm a better lady for it! Thanks for following! Following you now too!
